Ever had one of those days where you just wanted something simple like a salad…but a really GOOD one that didn’t take too much more out of you, like the day already had?!? Well this is it- a good ol’ fashioned CAESAR, with a twist!! Cool and refreshing on a hot day with added vitamins and nutrients of kale, delicious protein from great northern beans, ‘crunch’ satisfaction from the croutons, and a bit of added sharpness from shaved parmesan. Simply a recipe for tasty!
White Bean Kale Caesar Salad
Ingredients:
2 cups romaine
2 cups kale
1 cup great northern beans
1/4 cup Abstract Caesar Dressing: (1/4 cup olive oil + 1 tbsp vegan mayo + 2 tbsp lemon juice + 2 tbsp grated parmesan + 1 tsp Abstract Lemon Salt & Pepper + 1 tsp garlic powder: whisk together until smooth)
1/2 cup herb croutons
1/2 shaved parmesan cheese
The Process:
Toss greens and beans together with dressing until well coated.
Top salad with croutons and shaved parmesan
