INGREDIENTS:
1/4 cup onion
1 cup low sodium broth
1 cup broccoli
1 tsp cornstarch
1 tsp Abstract Spice Spicy
1 tsp honey
1 tbsp minced garlic
4 oz lean protein (chicken, tofu, shrimp, beef)
zest strips of 1/2 a lemon
1/2 cup brown rice (cooked)
THE PROCESS:
1. Slice onions into thin strips and slice *optional* lean protein into thin, 1-inch pieces. 2. Coat skillet with cooking spray and heat over medium heat. 3. Add protein and onion and stir fry until browned and cooked through. Remove onto a plate and keep warm. 4. Add half the broth and broccoli to pan. Cover and simmer until broccoli is cooked to desired tenderness. 5. In a small bowl, mix cornstarch, honey, Abstract Spice Spicy and garlic to remaining broth. 6. Add to the pan and cook over medium heat until mixture begins to thicken, stirring constantly. 7. Return protein/onion to the pan adding lemon strips, and heat through. 8. Serve over cooked brown rice.
