RECIPE POST: Abstract Salmon Bowl




OMG!!! I am literally making this post under duress! This recipe was created for an event I did for my sorority's Nutrition Awareness initiative for the Boston, MA. Such an amazing interactive event! I don't think the audience or facilitators were expecting such an informative and delicious segment. The purpose behind the initiative regarding substantial healthcare for all and healthcare breakthroughs was so encouraging and motivating, making my cooking experience segment the cherry on top!


The theme for my segment was: "The Spice of Life: Healthy Food, Healthy Life". So fitting, wouldn't you say? When I speak of food from a culinary healthy perspective, I make it a point to incorporate mental and overall health. They both work in tandem with one another and feed each other as we feed our bodies. If our minds are not healthy we tend to make unhealthy food and life choices. And if we are eating unhealthy...see the pattern?

As a matter of fact, majority of the superfoods grown that are ideal in aiding the fight against mental illness are coincidentally the very same foods that aid in optimal health for our hearts and the body's overall functionality! How amazing is that!


This recipe integrates this very sentiment. It is in fact a seasonal bowl, but can be enjoyed all year round! It's a fresh delicious blend of healthy fats, protein, and complex carbs (the ones that pay rent in your body, lol!). The flavors are as abstract as the final presentation. Zesty, creamy, crisp, sweet, cruncy, savory, and umami, we've got it all in this Abstract Salmon Bowl! But don't take my word for it, you MUST try this easy and simple powerful recipe for yourself....and let me know what you think!



ABSTRACT SALMON BOWL

Ingredients:

  • 4-5 ounces of prepared Perfectly Seared Salmon (click here for the recipe!)

  • 2 cups chopped kale, rinsed and drained

  • 1/2 cup of the following:

    • diced cucumbers

    • sliced grape or cherry tomatoes

    • sweet corn (fresh off the cob is best when in season, but canned will do!)

    • white great northern beans

    • wild rice/quinoa

    • diced honey crisp or granny smith apple

  • 1/4 cup extra virgin olive or walnut oil

  • 1/2 lime, juiced

  • Abstract Rose Sea Salt to taste

  • **Optional Toppings: sliced olives (I used green), roasted sunflower seeds, crispy onion straws)


CREAMY BALSAMIC DRESSING

  • 1 tbsp vegan mayo

  • 1 tbsp honey

  • 2 tbsp balsamic vinegar

  • 1 tbsp extra virgin olive oil

  • 2 pinches of Abstract Rose Sea Salt

(Whisk ingredients together until well incorporated and a creamy brown color is achieved)



Building The Bowl:

  1. Add kale to a suitable bowl add lime juice, 1/4 cup extra virgin olive oil, and a few pinches of Abstract Rose Sea Salt to taste. Line evenly the dressed kale to the bottom of your serving bowl.

  2. Each star ingredient will have its own section, but feel free to get creative and make it your own! There is no rhyme or reason in designing your bowl, just make sure it's done in great taste...YOUR taste!

  3. After adding all the star ingredients, drizzle on the Creamy Balsamic Dressing and lastly top with your favorite healthful toppings.

  4. ENJOY!
